Olive pomace oil and virgin olive oil are both highly mono-unsaturated oils and therefore resistant to oxidation and hydrogenation. Studies have shown that oxidation and hydrogenation occurs to a lesser degree in olive oil then in other oils. The amount of hydrogenation is minuscule and no home cook would ever experience this problem.

The common myth that heating olive oil will make it saturated or trans fatty is not true. According to Dr. A. Kiritsakis, a world renowned oil chemist in Athens, in his book Olive Oil From Tree To Table, all oils will oxidize and hydrogenate to a tiny degree if repeatedly heated to very high temperatures such as is done in commercial frying operations. Cooking in olive oil diminishes the foods nutritional value is an untrue myth. The fact is that high heat such as frying and sauteing will break down the foods nutritional value. It's not the cooking oil per se, but the high heat that causes this is some cases. Olive oil has a low smoke point and is not suited for high heat cooking.

Olive oil can be combined with canola oil to raise the smoke point while still allowing you to enjoy the health benefits and flavor of cooking with olive oil. Many nutritionists recommend lightly steaming vegetables and adding a touch of flavorsome extra virgin olive oil at the table for added taste and healthful anti-oxidants. This is a trait of the Mediterranean Diet which has been known to prevent coronary disease and other health benefits.

Extra virgin olive is one of the few oils that can be eaten without chemical processing. Nearly every other vegetable oil has been detoxified and refined with steam and solvents. Fresh pressed olive oil can be eaten

Olive oil can be used straight from the bottle for baking and cooking. Extra virgin olive is more expensive then some of the regular olive oils so you may want to consider that when deciding which one to choose for your cooking and baking needs. The health benefits are abundant in either choice.
