Many rumors have been circulating about whether Olive Oil loses it's healthiness after it has been heated to a certain temperature and some rumors state that this is just not true, that Olive Oil is healthy no matter what temperature you cook it to and does not lose it's beneficial properties.
Another rumor floating around the internet is that when Olive Oil is cooked it creates trans fat, which I found this rumor completely ridiculous because if people were going to buy and cook with (oh so pricey) Olive Oil just to obtain the same trans fat that they were trying to avoid by not using butter and margarine then why spend the extra money at all? This rumor is definitely not true and is just plain unbelievable.
As to why Olive Oil is healthier than other oils, Olive Oil contains polyphenols, which according to this article are substances that are found in plants that can possibly reduce your chances of getting heart disease or certain types of cancer. Olive Oil also contains very healthy monosaturated fat, which is (believe it or not) a healthy fat type.
Olive Oil has one more big benefit according to this article from www.Helpwithcooking.com and that benefit is that Olive Oil can form a crust over the food you are frying and in turn it leaves your food tasting better because the oil does not enter the food you are cooking due to the crust that is formed.
To sum it up, Olive Oil is a great substance to cook with and it is good for you too, no matter how long or how much you cook it. Extra Virgin Olive Oil is probably your best choice if you are trying to get all of the benefits that most dieters are looking for (weight loss and a healthier life).
